Coconut Bliss Balls

Those late summer days here in Austria are still quite warm. But our bodies are already transitioning from those warm Pitta days, to colder Vata days in the fall.

Vata tends to be higher than usual, you find it when you are cold or have dry skin.

These bliss balls contain cooling coconut for those warm days and the nourishing oils from the cacao butter make it a perfect treat.

Coconut oil is a light, refreshing and cooling oil. Have you noticed, as soon as autumn is around the corner, you start to feel a bit more anxious or nervous about the work load ahead? This oil will help soothe your nerves.

If you use coconut sugar in this recipe, your blood sugar levels won’t spike as high, while maple syrup is a cooling sweetener.

While these coconut bliss balls pacify Pitta and Vata, they may aggravate Kapha. You can enjoy them nevertheless, just in smaller quantities.

This recipe takes about 2,5 hours to make (including cooling time) and makes about 12 bliss balls (depending on size).

INGREDIENTS

-       75 g coconut flakes

-       90 g coconut milk, solid parts only

-       20 g cacao butter, melted

-       2 tbsp coconut oil or coconut butter, melted

-       2 tbsp almond butter

-       pinch bourbon vanilla

-       pinch rock salt

-       30 g (a big handful) of coconut flakes on the side

-       optional: coconut almond spread (without palm oil!) or blanched almonds

INSTRUCTIONS

Mix everything together either in a bowl or a high-speed blender, besides one handful of coconut flakes (30g).

Let the mix cool down in the fridge for 2 hours and then take a tablespoon full of the mixture in your hands, make a flat ball and you may put a blanched almond or coconut almond spread in the middle and form a ball.

Use either homemade coconut almond spread or one from an organic store, but be sure to choose one without palm oil!

Then roll the bliss balls in the remaining coconut shreds.

They last up to a week in the fridge.
